Q. Is there a way to change the duties on the duty roster?

A. You cannot change the standard roles, but you can disable them and add custom roles. On the siteadmin page, search for Custom Roster Duty.

Edit the roster, and set the person to "Do Not Use".  Each new roster seems to be based on the the last one that exists, so the change should propagate.

Clarification: in order to edit the roster, you have to be logged in as a user (as opposed to site admin) who is authorized to do so. Near the top of the admin page is a listbox where the admin can designate members to be authorized to edit rosters.
